There are so many new mint chocolate chip items coming out this year. I’ve seen mint chocolate chip froyo and ice-cream, all sorts of new cookies, protein powders, and then Halo top and Quest both dropped their mint chocolate chip ice-cream and protein bar respectively. I’ve recently grown to love the mint-chocolate combination, so I had to make my favorite breakfast item to commemorate this new-found love of mine! These pancakes are absolutely AMAZING! They’re also pretty heavy on the macros, so I’ll give you some substitution options in case you want to drop some fat/carbs.

Cooking Instructions
Pancake Ingredients:
40g old-fashioned oats
1 scoop vanilla protein powder
22g fat free Greek yogurt
92g egg whites
1/2 tsp baking powder
1/2 tsp peppermint extract
1/2 tsp green food coloring
Topping Ingredients:
32g Dark Chocolate Dreams peanut butter by Peanut Butter & Company
Mint Chip Halo Top ice-cream
22g fat free Greek yogurt
24g semi sweet chocolate chips
1 mint chocolate chunk Quest bar
Substitution option: If you’re trying to lower your fat/carb intake, instead of using peanut butter, use PB Lean and mix it with some unsweetened almond milk or water to create peanut butter which you can add to the sauce. Feel free to use half of your Quest Bar in order to drop carbs.
Directions:
In a bowl weigh out your semi sweet chocolate chips. Next unwrap your quest bar and cut it up into small pieces and add them to the bowl.
Add the old fashioned oats to your blender and blend until a flour consistency is reached.
Pour the oat flour into a bowl. Then add the remaining pancake ingredients (vanilla protein powder, baking powder, unsweetened almond milk, fat free Greek yogurt, egg whites, 1/2 tsp of peppermint extract and 1/2 a tsp of green food coloring) and whisk till you reach a batter consistency.
In a separate bowl, weigh out 32g of the Dark Chocolate Dreams peanut butter, add 22g of fat free geek yogurt, and two tablespoons of unsweetened almond milk. Use a fork to mix the sauce till it’s thick.
Spray a pan with cooking spray and turn the heat to medium low. Ladel in your pancake batter and cook like you would cook regular pancakes. When the first pancake is done cooking, put it in a plate and top with some chocolate chips and quest bar pieces. Then add your next pancake on top of the stack. Repeat this process until you run out of pancake batter.
Top your pancake stack with the chocolate peanut butter sauce. Add any remaining chocolate chips and quest bar pieces. Lastly top with the Mint Chip Halo Top ice-cream.
