Cooking Instructions
Ingredients:
½ cup liquid egg whites
¼ cup rolled oats (gluten-free or regular)
1 scoop vanilla whey protein powder
1 tablespoon coconut flour
1/2 tablespoon of chia seeds
½ teaspoon baking powder
2 tablespoons of low fat cottage cheese (or smashed banana or sweet potato or pumpkin puree)
10 teaspoons of sugar-free Blackberry jelly
Directions:
Preheat oven 325 degrees F.
Using a blender or a food processor, blend the above ingredientes together except the jelly.
Pour into mini muffins cups, with a teaspoon of the jelly on top (or in the middle, while puting the cream). I made them using a mini muffin silicone mold, but in case you don´t have one, you can use a regular ones, and spread coconut oil before.
Bake then for 10-15 minutes, or until a knife inserted into middle comes out clean.
