  • Calories: 45

  • Protein: 5 grams

  • Carbs: 5 grams

Cooking Instructions


Ingredients:

  • ½ cup liquid egg whites

  • ¼ cup rolled oats (gluten-free or regular)

  • 1 scoop vanilla whey protein powder

  • 1 tablespoon coconut flour

  • 1/2 tablespoon of chia seeds

  • ½ teaspoon baking powder

  • 2 tablespoons of low fat cottage cheese (or smashed banana or sweet potato or pumpkin puree)

  • 10 teaspoons of sugar-free Blackberry jelly

Directions:

  1. Preheat oven 325 degrees F.

  2. Using a blender or a food processor, blend the above ingredientes together except the jelly.

  3. Pour into mini muffins cups, with a teaspoon of the jelly on top (or in the middle, while puting the cream). I made them using a mini muffin silicone mold, but in case you don´t have one, you can use a regular ones, and spread coconut oil before.

  4. Bake then for 10-15 minutes, or until a knife inserted into middle comes out clean.

  5. Enjoy!
