Honestly it's VERY HARD for me to pic just one game, but if I had to...
I'd say SUPER MARIO 64
This game was eons ahead of its time; it was the forerunner for 3D gaming (a huge step forward from the 2D mario games before it).
Every painting world had distinct environments, characters, and star challenges.
And of course, what's more fun than throwing around an overgrown Koopa by the tail while hearing Mario yell "SO LONG BIG BOWSER!"

One of my friends in grade school convinced me you'd have a 4th Bowser fight (Metal Bowser supposedly) if you got all 120 stars.
So I got all 120 stars...
...and Yoshi showed up ; no fight either. At least he gives infinite lives!
Mine was Perfect Dark, the one that came out in the 2000s. It was the first and last videogame I ever bought, n64 was the best.

Mostly just get to play Minecraft (heavily modded) on PC these days, but I have always been a huge fan of Gran Turismo and now Project CARS as well as the Rockband series. Other than that, wife is the big gamer in the house these days, so I just play along with whatever she's playing on PC.
Used to be a big PC and PS1+2 gamer, and started like most people on the NES/SNES/Genesis/N64
