Cooking Instructions
Ingredients:
1 Zucchini
2 oz Extra Lean Ground Chicken
1 TBSP Daiya Dairy-Free Pepperjack Style Shreds
2 tsp Nutritional Yeast
1 TBSP Low-Sodium Salsa (E.g. Green Mountain Gringo Medium Salsa)
Directions:
Steam 1 zucchini in the microwave for 2 minutes.
Slice the zucchini (lengthwise) in half, scoop out the center.
In a non-stick skillet (or use PAM non-stick cooking spray), cook 2 oz of extra lean ground chicken (preferably white meat).
Spoon the chicken into the depression you created in each zucchini, and add the cheese, nutritional yeast and salsa.
Microwave for 1 additional minute to melt the faux cheese.
