And on the 6th day, God said, "Let there be tacos". And there they were.

My tacos get a 10 out of 10 on the TACOmeter (taco pun).

Cooking Instructions


  • 1 Zucchini

  • 2 oz Extra Lean Ground Chicken

  • 1 TBSP Daiya Dairy-Free Pepperjack Style Shreds

  • 2 tsp Nutritional Yeast

  • 1 TBSP Low-Sodium Salsa (E.g. Green Mountain Gringo Medium Salsa)


  1. Steam 1 zucchini in the microwave for 2 minutes.

  2. Slice the zucchini (lengthwise) in half, scoop out the center.

  3. In a non-stick skillet (or use PAM non-stick cooking spray), cook 2 oz of extra lean ground chicken (preferably white meat).

  4. Spoon the chicken into the depression you created in each zucchini, and add the cheese, nutritional yeast and salsa.

  5. Microwave for 1 additional minute to melt the faux cheese.

  6. Enjoy!
