Cooking Instructions:
Ingredients:
- 2 cups diced fresh pineapple (grilled, then frozen)
- 1/2 cup fresh cilantro, chopped
- 1/4 cup finely chopped red onion
- 1 serrano pepper, seeded and finely chopped
- Zest and juice of 1 lime
- 1/8 teaspoon fine sea salt
- 1 cup of corn
- 3-5 thick ice-berg leaves
Directions:
- Dice 1 inch pineapple slices and grill on low heat until brown marks are left on pineapple.
- Freeze for 30-45 minutes.
- Dice up all ingredients (except ice berg) and mix together.
- Pour ingredients into a bowl with the ice berg leaves.
- Enjoy!
*Tip: Tastes great with added Salmon!
