Fresh Grilled-Pineapple Cilantro Corn Salad

A Sweet Summer Treat That’s Good Year Round!

Anyone else miss summer weather? Well don’t worry, you can simply enjoy the sweet sensation this salad brings! Full of flavor and healthy antioxidants!

Cooking Instructions:


  • 2 cups diced fresh pineapple (grilled, then frozen)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup finely chopped red onion
  • 1 serrano pepper, seeded and finely chopped
  • Zest and juice of 1 lime
  • 1/8 teaspoon fine sea salt
  • 1 cup of corn
  • 3-5 thick ice-berg leaves


  1. Dice 1 inch pineapple slices and grill on low heat until brown marks are left on pineapple.

  2. Freeze for 30-45 minutes.

  3. Dice up all ingredients (except ice berg) and mix together.

  4. Pour ingredients into a bowl with the ice berg leaves.

  5. Enjoy!

*Tip: Tastes great with added Salmon!
