These Are Egg-celent!

These egg muffins are a great option if you are looking for a quick, low carb, high protein snack. These are delicious by themselves or can be enjoyed as part of healthy breakfast or dinner. Each muffin is packed with flavor and will help fuel your muscles with 13 grams of protein!

Cooking Instructions

Ingredients:

  • 4 eggs

  • 4 egg whites

  • 2 cups of fat-free shredded mozzarella cheese (I use Kraft)

  • 4 diced green onions

  • ½ yellow or white onion diced

  • 6 slices of fat free deli turkey breast

  • White pepper to taste (can use black pepper as well)

  • Salt if desired (not required)

Directions:

  1. Pre-heat oven to 375 degrees F.

  2. Mix all of the ingredients in a large bowl.

  3. Spray a muffin pan with non-stick spray (you can use either a silicon or metal pan) and pour the mixture on each slot filling it to about 90%. You want to leave a little space for the muffin to grow. As you pour the mixture on each muffin slot, make sure each one gets about the same amount of cheese and turkey as they tend to sink to the bottom of the bowl.

  4. Place the pan in the oven and bake 25 to 35 minutes or until the muffins have grown and the borders are slightly brown.

  5. You can eat them fresh or keep in the refrigerator as an on the go snack.

  6. Enjoy!
