Cooking Instructions
Ingredients:
1 bag frozen cauliflower florets
½ cup fat free mozzarella cheese
2 eggs
1 tsp minced garlig
Oregano and pinch of salt
Directions:
Preheat oven to 425.
Cut the cauliflower into small florets and toss into a food processor and process until the cauliflower reaches a rice/mashed potato look. The finer it is, the better the end result will hold together.
Scoop the cauliflower into a cheesecloth. You can find a cheesecloth at most grocery stores in the kitchen section. I purchased mine from Vitacost.com as they have the best prices on health foods and kitchen necessities.
When in the cheesecloth the cauliflower should have the look of rice/mashed potatoes.
Place the processed cauliflower into a microwave safe bowl and cook for 4 - 6 minutes, stopping to stir halfway through.
Once cooked, allow to cool for a few moments before handling.
Add the remaining ingredients to the bowl of cauliflower and mix together. Next, line two baking sheets with foil and spray with non-stick spray and spoon the mixture onto parchment paper, creating two flat pizza pies.
Top the pizza pies with whatever your diet permit.
Place into the oven to bake for 20 - 25 minutes.
