Cooking Instructions


Ingredients:

  • 2lb beef meat, chuck or round, or flank
  • 3 garlic cloves, chopped
  • 1 tsp paprika
  • 1/8 tsp cumin
  • 1/8 tsp clove powder
  • 1 tbsp oregano
  • 4 bay leaves
  • 5 canned chipotle chillies
  • 3 cups water
  • 1/3 cup apple cider vinegar
  • 1/3 cup fresh squeezed lime juice
  • 4 tsp of Himalayan pink salt divided
  • 2 tsp black pepper divided
  • Fresh cilantro or parsley for garnish



Directions:

  1. Season both sides of the meat with 2 tsp of salt and 1 tsp of pepper. Meat can be cut into big steaks for easy searing, but not too small.

  2. Sear the meat 2 min per side on a very hot cast iron pan or regular pan without adding any oil.

  3. Once all the meat is seared, add to slow cooker and add the rest of the ingredients including the left over salt and pepper.

  4. Cover and let cook on low for at least 6hrs. 8hrs preferably.
  5. Allow to cool and shred the beef with a fork. Serve and garnish with cilantro or parsley on top.

  6. Enjoy!
