Cooking Instructions
Ingredients:
- 2lb beef meat, chuck or round, or flank
- 3 garlic cloves, chopped
- 1 tsp paprika
- 1/8 tsp cumin
- 1/8 tsp clove powder
- 1 tbsp oregano
- 4 bay leaves
- 5 canned chipotle chillies
- 3 cups water
- 1/3 cup apple cider vinegar
- 1/3 cup fresh squeezed lime juice
- 4 tsp of Himalayan pink salt divided
- 2 tsp black pepper divided
- Fresh cilantro or parsley for garnish
Directions:
- Season both sides of the meat with 2 tsp of salt and 1 tsp of pepper. Meat can be cut into big steaks for easy searing, but not too small.
- Sear the meat 2 min per side on a very hot cast iron pan or regular pan without adding any oil.
- Once all the meat is seared, add to slow cooker and add the rest of the ingredients including the left over salt and pepper.
- Cover and let cook on low for at least 6hrs. 8hrs preferably.
- Allow to cool and shred the beef with a fork. Serve and garnish with cilantro or parsley on top.
