Switch Things Up With Flavorful, Crispy, Crunchy Quinoa Patties!

Bored of the brown rice and sweet potato being your major complex-carbohydrate source? Think no further! This quinoa mixture is easy to create, and makes meal prepping a lot less tedious.


Quinoa is very well known as a rich source of protein. It is a whole grain crop which is grown primarily for its edible seeds. It is a very healthy food source that contains many vitamins, and has a protein content that is 100 calories higher than brown rice, potatoes, barley and millet.

Quinoa is also cooked in about half the time as rice. To cook it, you simply bring 2 cups of water to a boil, and then add 1 cup of quinoa. Let it simmer for 20-minutes or until fluffy.


The flavor of quinoa mixed with tasty spices, chives, bread crumbs and parmesan cheese is to die for! After adding quinoa cakes to my diet I now look forward to eating my prepped meals. The low-fat calories per serving will help keep your diet on track and the great source of protein will provide quicker muscle recovery. Try them for yourselves! One batch makes approx. 12 patties.

Cooking Instructions

Ingredients:

  • 2 ½ cups cooked quinoa (at room temperature)

  • 1 large egg + 3 eggs worth of egg whites

  • 1/2 tsp sea salt

  • 1/3 cup chives

  • 1 yellow or white onion – chopped

  • 1/3 cup grated parmesan cheese

  • 3 cloves of garlic – chopped

  • 1 cup whole grain bread crumbs

  • 1 Tbsp water (if needed)

  • 1 Tbsp extra-virgin olive oil

Directions:

  1. Mix quinoa, salt, and eggs in a bowl.

  2. Add chives, onion, cheese and garlic, and continue to mix.

  3. Add and stir in the bread crumbs.*

  4. Let mixture sit for 5 minutes.

  5. Create twelve 1 and a half inch patties

  6. Heat oil in a pan on low heat.

  7. Place patties on pan and flip them after 6 minutes (or until golden brown).

  8. Let patties cool for 5 minutes.

  9. Enjoy!

*Add more eggs to wet mixture if too dry OR Add more bread crumbs if too wet.
