I'm just cooking this recipe, which I found in the Australian edition of Men's Fitness in June 2012. I thought that I'd share it.
The plan is to freeze this to eat through the week. I'm going to add the kidney beans, spinach, coriander, lime and avocado when I'm heating it up and about to serve. Apologies to readers in the US and UK, as these measurements are metric.
I think that you could even subsitute the beef mince for turkey mince, to really get a protein hit. But this is dead easy to do and it smells great in our house right now.
Lean chilli con carne

Ingredients:
- 1 onion, finely chopped
- 1 large carrot, grated
- 2 sticks celery, chopped
- 1 tsp cumin, ground
- 1 tsp smoked paprika
- 500g lean mince
- 1 red capsicum, chopped
- 2 tbsp tomato paste
- 400g red kidney beans (canned)
- 400g tomatoes (canned)
- 100g baby spinach leaves, rinsed
- 1 avocado, chopped
- 1 bunch coriander, chopped
- 1 lime
- Red chilli, to taste
Method:
- Stir fry onion, carrot and celery for 3 minutes, until softened. Add spice and mince and cook through for 5 minutes until mince is browned.
- Add capsicum, tomato paste, canned tomatoes and beans then pour over two cups of water.
- Simmer over a low-medium heat, until thick.
- Season with ground pepper and fold in spinach and coriander. Serve in bowls topped with chilli avocado and a squeeze of lime.
- Enjoy as is or with a side of steamed green vegetables or quinoa.
