I am on 500cal deficit. Routine 3 days a week push/pull/legs+abs (+HIIT on push/pull days).
Big muscle groups I workout near failure. Small muscle groups I manage to get to total failure.

When should I drop my volume or weights to avoid overtraining?

Weight 73.5kg

Overtraining is very hard to do. Harder than a lot of people think, and it's not normally overtraining that happens, it's actually undereating or under-recovery. You still need to deload every 8-12 weeks ideally, in which case you would basically cut your weights in half for a week, or just take a week off from training altogether.

Whenever you deload though, keep your eating the same - same macros, same calories. I actually have an article on the site about it too - http://muscularstrength.com/article/reach-your-true-potential-while-avoiding-overtraining

One last thing is I don't recommend going to failure all the time for all of your sets. You should only go to failure maybe once per workout max, otherwise you'll really tax your Central Nervous System (CNS) and burn out really quick, ESPECIALLY when in a deficit.
