My friend, Jodie Stephens-Quintero is sharing her 2 yummy high protein sandwiches with us! And you'll never guess what her secret ingredient is?? Cottage Cheese!

  • Tuna Salad Sandwich

  • Egg Salad Sandwich

It's high in protein because of the tuna or egg combined with the cottage cheese on 2 slices of P28 High Protein Bread. Clever, eh?

Tuna Salad Sandwich Nutritional Facts


Serving Size: One Sandwich

  • Calories: 417

  • Protein: 52.5 grams

  • Carbs: 33.3 grams

  • Fat: 10.4 grams

Cooking Instructions

Ingredients:

  • 1/3 cup tuna (low sodium) packed in water (Drain it)

  • 3 TBSP  fat free cottage cheese (instead of mayonnaise)

  • 1/8 cup chopped onion

  • 1 tsp relish

  • Season to taste

  • Toast 2 slices of P28 High Protein Bread

Directions:

  1. Combine the ingredients in a bowl and mix.

  2. Make the sandwich: place the tuna salad, lettuce and tomatoes between both pieces of bread.

  3. Enjoy!

Egg Salad Sandwich Nutritional Facts


Serving Size: One Sandwich

  • Calories: 405

  • Protein: 41.5 grams

  • Carbs: 33.9 grams

  • Fat: 12.4 grams

Ingredients:

  • 1 chopped hard boiled egg (I purchase mine already hard boiled to save time)

  • 3 TBSP  fat free cottage cheese (instead of mayonnaise)

I like these ideas - especially since I loathe mayonnaise on a subatomic level.
