Spicy Chicken Thighs

Serving Size: 1 serving

  • Calories: 548

  • Fat: 32 grams

  • Carbs: 15 grams

  • Protein: 50 grams

Cooking Instructions

Ingredients:

  • 4 chicken thighs (boned)

  • 1 tin of chopped tomatoes

  • 2 onions

  • ½ lemon

  • Tbsp olive oil

  • Paprika

  • Black Pepper

  • Salt 

  • Chilli Powder

  • ½ pint of chicken stock

Instructions:

  1. Chop the onions and add to a pan on low heat with salt pepperchilli powder and paprika.

  2. Add the boneless chicken thighs skin down.

  3. When they starting to brown and mixed in with spice and onion add peppers and few squirts of lemon juice.

  4. Keep the lid on, don't stir too much as the chicken will fall apart.

  5. When the peppers are soft add the chopped tomatoes, with chicken stock leave to simmer for at least an hour.

  6. Steam your preferred veg and serve.

  7. Enjoy!

NOTE: You can serve this with any vegetable you like, I prefer broccoli and baby sweetcorns and if you wanted to add some carbs this goes really nice with rice.
