My friend Tiffany Stanley makes the most AMAZING banana bread...so I decided to make my own version!


This yields a pretty large loaf. I cut it into 8 generous pieces.

Nutritional Facts


Serving Size: 1/8th of the Loaf (One Piece)

  • Calories: 159

  • Protein: 5.2 grams

  • Carbs: 11.3 grams

  • Fat: 10.6 grams

Cooking Instructions


Ingredients:

  • 2 mashed ripe bananas

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 2 TBSP extra virgin coconut oil

  • 1/2 cup egg whites

  • 1/2 cup Walden Farms Calorie Free/Sugar Free Pancake Syrup

  • 1 tsp baking soda

  • 2 TBSP dark chocolate chips (>70%)

Directions:

  1. Preheat your oven to 400 degrees F.

  2. Mix all ingredients in a larage bowl.

  3. Place into a silicone loaf pan sprayed with PAM and bake for ~35 minutes. Do the toothpick test to confirm it is fully cooked.

  4. Enjoy!
