Protein Fruit Cake!

Delicious fluffy protein cake layered by several levels of fruit greek yogurt! Very high in protein, low in carbs, almost no fats!


To prepare yourselves for this recipe, make sure you have ready: cake tins, a mixing bowl, a zester and a spatula.

Cooking Instructions

Ingredients:

  • 3 cups blueberry Greek yogurt
  • 3 cups strawberry Greek yogurt
  • 1 cup chocolate Greek yogurt
  • 140g oat flour
  • 2 scoops vanilla whey protein
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • Half an orange: orange zest
  • 110g egg whites
  • 100g unsweetened apple puree
     
     

 

Directions:

  1. Turn oven to 350F.

  2. In a bowl, mix together the mixed fruit, almond or oat flour, cinnamon, nutmeg, vanilla whey and orange zest.

  3. Add the egg whites and apple puree to the mixture and mix well to form a thick dough.

  4. Pour the dough into two cake pans lined with a bit of coconut oil to stop it sticking and smooth over the top to make it even and make sure the batter fills the pan.

  5. Bake for 20-25 minutes until fully baked throughout and leave to cool.

  6. Once cooled, start layering the cakes with the Greek yogurt. Add any additional toppings for presentation!

  7. Enjoy!
