Say Goodbye To Boring Chicken!

I make this recipe all the time! Chicken can get very boring very fast. This gives it a nice zip! Plus you benefit from the high fibre content of the black beans, if you know what I mean ;)


This recipe can be made two ways - in the oven, or in a crock pot.

Serving Size: Half Of The Recipe

  • Calories: 277

  • Protein: 31.7 grams

Cooking Instructions


Ingredients:

  • 2 uncooked skinless chicken breasts (I used smaller sized breasts, so when cooked, this is ~8oz)

  • 1/2 cup black beans (no sodium added)

  • 1 cup of sliced bell peppers (any colour is fine … or use your favourite veggies)

  • 10 sliced cherry tomatoes

  • 1/2 cup salsa (try to find a lower sodium option)

  • 1/4 cup Daiya Dairy Free Cheese (substitutions: 2-3 TBSP nutritional yeast or use 1/4 cup skim cheese)

  • Seasoning (black pepper, salt-free Mrs. Dash, etc.). I also used dehydrated onion flakes.

Oven Directions:

  1. Preheat your oven to 350 degrees F.

  2. Place all ingredients into an oven friendly glass dish.

  3. Place it into the oven for 30-35 minutes (depending on your oven, you may need more or less time).

  4. Enjoy!

Crock Pot Directions:

  1. Another option is to use your Crock Pot (Slow Cooker). My Crock Pot was ~$30, which is within my "kitchen gadget budget"!

  2. This is easy! Just dump the ingredients into your slow cooker (I sprayed mine with PAM non-stick spray first) and I used the low setting for about 4 hours (I checked it periodically). Just follow the instructions for your slow cooker. Here's a peek inside my crock pot!
