Enjoy a Colossal Portion of Pasta - Minus the Guilt!


This is my Tofu Shirataki Pasta with Chicken, Bok Choy, Sundried Tomato and Spicy Cheesy Sauce.


This recipe is awesome because its:

  • Low carb (only 7 net carbs)

  • Under 220 calories

  • Low sugar

  • Diabetic friendly

  • High in fiber

  • Gluten-free

  • Dairy-free

  • Very delicious!

Cooking Instructions


Ingredients:

  • 1 package (8 oz) Tofu Shirataki Fettuccine Shaped Noodle Substitute 

  • Bok Choy

  • Boneless Skinless Chicken Breast

  • 1 TBSP Nutritional Yeast

  • 1 TBSP Sundried Tomato Bits

  • Seasoning (Salt-Free Mrs. Dash, Pepper, Hot Chilli Pepper Flakes

Directions:

  1. Prepare the Fettuccine - Drain and thoroughly rinse 1 package (8 oz) Tofu Shirataki Fettuccine Shaped Noodle Substitute (USA Shoppers). Canadian shoppers please click here. (This is a low calorie/low carb/gluten-free pasta alternative made from blending the root of the Konnyaku (a member of the yam family) and tofu).

  2. Boil for 2-3 min.

  3. Dry very well.

  4. Wash the bok choy.

  5. Cut off the base of the bok choy and measure 1 cup of it.

  6. Steam the bok choy by placing it in a pot of boiling water.  Cover and steam for 5 minutes or until the leaves are tender.

  7. On a non-stick skillet (or use non-stick cooking spray), grill a skinless chicken breast.

  8. cut into bite-size pieces and measure 4 oz using your kitchen scale.

  9. Combine all of your Ingredients and Season.

  10. Enjoy!

NOTE: Hot chill pepper flakes or cut up a mini hot pepper.  Hot peppers are a great way to kick your metabolism up a notch.
