4 Protein Packed, Fat Burning Taco Recipes For Summer

1. Aquaman Avocado Tuna Tacos

 


When it comes to food on a hot day, do you really want to stand in front of a grill while it’s 90 plus degrees outside? For days like this I have the perfect protein packed perspiration preventative provision for you.


This burrito combines the cool, delicious taste of avocado with protein-rich tuna. It will not only deliver the protein your body needs to fuel itself and build muscle but, the healthy fats in avocado have been shown to help decrease belly fat. According to research, when compared to other healthy fat sources, avocados:

  • Burn off at a much higher rate than other fats
  • May increase the rate of fat burning
  • Can cause your body to burn more calories after eating

Plus, they're packed with vital nutrients like Vitamin K, Potassium, Vitamin B5, Vitamin E, and more importantly, they provide a cool sensation to your taste buds.

Cooking Instructions


Ingredients:

  • 1-2 can/s of tuna (depending on your protein requirements)
  • Lettuce
  • Olive oil
  • Cheddar cheese
  • Red onion
  • Cucumber
  • Celery
  • Tortillas* (carbs may vary depending on the type of tortillas you buy)
  • Black pepper
  • Lemon juice
  • Sea salt

Directions:

  1. Chop the cucumber, red onion, and celery.

  2. Dice half the avocado into small ¼ inch pieces.

  3. Drain the tuna – opt for the tuna in water and not in oil – and place it in a bowl.

  4. Add the veggies and avocado to the tuna.

  5. Add 1 teaspoon of lemon juice, and 1 teaspoon of olive oil. Sprinkle with salt and pepper.

  6. Mash and mix all the ingredients together.

  7. Spoon the mixture into the tortillas, top with shredded cheese, and add lettuce as a garnish.

  8. Enjoy!


2. Bacon Pineapple BBQ Chicken Tacos



Warmer weather means one thing: firing up the grill. And when it comes to putting more taste in your mouth, nothing beats BBQ grilled chicken. Well, until you add grilled pineapple and bacon to it!


Of all the tacos I’ve made, this is hands down the best. The saltiness of the bacon, the tanginess of the BBQ sauce, and the sweetness from the grilled pineapple provides all the deliciousness you crave while dieting.


Cooking Instructions


Ingredients:

  • Bacon
  • 6 ounces of chicken breast
  • BBQ sauce
  • Pineapple
  • Tortillas
  • Jalapenos
  • 1 ounce cheddar cheese
  • Red cabbage

Directions:

  1. Marinate the chicken in the BBQ sauce for 30-60 minutes (or for the most flavor, overnight).

  2. Chop and then dice the red cabbage.

  3. Dice the jalapenos and shred the cheese. Leave the veggies and cheese to the side until you’re done. (If you don’t like super spicy things, discard the jalapeno seeds. But since you’re not a wuss, leave the seeds for some fire.)

  4. After the chicken has marinated for 30-60 minutes, cook it on your grill (3-4 minutes per side). At the same time, add the pineapple to the grill and let it cook for 10 minutes, rotating as needed. Once the pineapple is soft, it’s done.

  5. While the chicken and pineapple grill, cook the bacon on your stove on a low-medium heat – this will provide you time to run out and flip the chicken and pineapple a few more times.

  6. Once the bacon is done, chop it up.

  7. Once the chicken and pineapple are finished, bring them inside and chop them up into bite-sized pieces.

  8. Add the chicken, bacon, pineapple, and diced jalapeno and red cabbage to the tortilla.

  9. Top with the cheese. And then prepare your taste buds for awesomeness!

  10. Enjoy!


3. Peach Prosciutto Burrito



Let's keep it on both the light and fresh side (and the sweet and salty). This burrito is perfect those hot summer days when you want something delicious that doesn’t weigh your stomach down, and makes you feel sluggish while you spend a day on the beach.


This burrito has one of the most well balanced macro profiles of any burrito you can make. The only downside may be that because they are so dang tasty, you actually will be sluggish at the beach because you had to eat three of these!

  • Calories: 638
  • Protein: 48 grams
  • Carbs: 53 grams
  • Fat: 26 grams

Cooking Instructions


Ingredients:

  • 3-4 ounces of prosciutto
  • 1 peach
  • 1 large tortilla shell
  • ½ cup of reduced fat mozzarella
  • A handful of fresh basil
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar

Directions:

  1. Slice the peaches into ¼ inch slices.

  2. Place peaches in a bowl and drizzle with olive oil and balsamic vinegar.

  3. Mix the peaches, coating them with oil/vinegar.

  4. Grill the peaches for 2-3 minutes on each side.

  5. Place warm peaches on the tortilla and cover with mozzarella.

  6. Place the prosciutto over the cheese/peaches, then top with basil.

  7. Roll the burrito up and grill until both sides are brown.*
     
  8. Enjoy!

  

*NOTE: Grilling is optional for both the burrito and peaches and helps lock in more of the flavors.

With longer days and warmer nights, winding down after a day of fun in the sun usually involves a few drinks. And I’m not telling you something you don’t already know: hangovers suck.


Now, we all know the best way to soak up excess booze is by chowing down on a good bacon cheeseburger. But you're getting lean and don't want to pound down a greasy bacon cheeseburger the morning after you turned into Frank the Tank with the tequila.

Cooking Instructions


Ingredients:

  • Bacon
  • 4 ounces of 90/10 lean ground beef
  • 1 scrambled egg
  • 2-3 tortillas
  • ¼ cup of reduced fat cheese *optional*

Directions:

  1. Beat the egg and leave it to the side.

  2. Cook the bacon on medium heat, then cook the beef in the leftover bacon grease over medium-high heat.

  3. Once both the bacon and the beef are done, wipe the pan and spray the pan with non-stick spray.

  4. Turn the pan to medium and cook the eggs.

  5. Take them off the heat right before they’re done (they’ll continue to cook as they cool).

  6. Spoon the beef into the tortilla, add the egg, and top with the bacon. Kill your hangover.

  7. Enjoy!
