Enjoy the mouth-watering flavors of slow cooked potatoes, mushrooms, scallions, & garlic, soaked in rosemary chicken broth, blended with chucks of tender juicy Cajun chicken.

Cooking Instructions


Ingredients:


  • 6 bone-in chicken thighs, skin removed, trimmed of fat (or 1 lb chicken breast)
  • 2 pounds sweet potatoes, peeled and cut into spears
  • 1/2 pound white button mushrooms, thinly sliced
  • 6 large shallots, peeled and halved
  • 4 cloves garlic, peeled
  • 1 cup dry white wine
  • 2 teaspoons chopped fresh rosemary, or 1/2 teaspoon dried rosemary, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 1/2 tablespoons white-wine vinegar
  • ¼ cup Cajun seasoning


Directions:

  1. Toss chicken with Cajun seasoning and let sit for 30 minutes.

  2. Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a crock-pot (or slow cooker) on slow cook mode. Stir to combine.

  3. Put the lid on and cook on low until the potatoes are tender (about 5 hours).

  4. Before serving, remove bones (if a whole chicken was used) and stir in vinegar.

  5. Enjoy!

how much water do you add. that part is missing.

Maybe it doesn't need water? There is wine there for liquid :-)

Just joined tried this meal tonight was really nice family all lived it. Definitely going in our  weekly meal plan .  Don't no about feeding 6
